Russian Honey Cake (or "Medovik") is a very popular layered cake in Russia. It consists of layers of sponge cake and cream filling with a mixed nut topping. Honey is used in both the sponge and icing layers (although some recipes only incorporate honey into the icing). Layered cakes take some time to create but are meant to impress with their distinct structure.
This recipe was created by @TwoCupsFlour using Fool's Gold Premium Honey's Bourbon Infused varietal. Making all eight+ layers of this cake may be a labor of love, but we like to think its an everlasting love - the kind worth working for.
