• 2 large sweet potatoes, peeled and diced
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 tablespoon olive oil
• 1 tablespoon curry powder
• 1 teaspoon ground cumin

• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric
• 4 cups vegetable broth
• 1 can (14 ounces) coconut milk
• 2 tablespoons honey
• Salt and pepper to taste
• Fresh cilantro, for garnish (optional)

Prep the Ingredients:
Peel and dice the sweet potatoes, chop the onion, and mince the garlic.

Sauté Onion and Garlic:
In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic. Sauté until the onions are translucent and aromatic.

Add Spices & Sweet Potato
Add curry powder, ground cumin, ground coriander, and turmeric to the pot. Stir well to coat the onions and garlic in the spices. Then add the diced sweet potatoes to the pot. Stir to combine with the spices and sauté for a few minutes.

Add the Vegetable Broth:
Pour in the vegetable broth, ensuring that the sweet potatoes are covered. Bring the mixture to a boil, then reduce the heat to simmer. Cover and cook until the sweet potatoes are tender.

Blend the Soup:
Blend the soup until smooth and creamy. Return the soup to the pot. Stir in coconut milk and honey. Season with salt and pepper to taste. Simmer for an additional 5-10 minutes. Garnish with cilantro (optional).
